apple goat cheese quiche

my mom made the craziest quiche this weekend---goat cheese, apple, bacon, onion quiche!  so weird.  but it turned out to be absolutely delicious.  who would have thought apple could go in quiche?  but its awesome with the goat cheese and BACON. yum.  it lasts a few days, so its great to have for lunch or breakfast the next day.  the combination of all the ingredients are great for fall.

recipe after jump:

1. in a bowl, whisk 6 eggs and 1/2 a cup of whipping cream. add salt and pepper.

2. cook 2 slices of bacon in a pan. once done, break them into little pieces.

3. slice one granny smith apple, thinly.  slice a half of an onion, also thinly.

4. you can use the already prepared shells that come in a tin, or use the prepared dough and put it in your own tin. bake the pie shell for 10 minutes at 420, so that it is golden brown.

5. mix the the apple, onion and bacon into the egg mixture.

6. pour the egg mixture into the shell.

7. sprinkle the pie with the goat cheese.

8. bake for 25-30 minutes at 375.

9. eat it!
