PUMPKIN cupcakes! with cream cheese frosting

since the beginning of october, ive been obsessed with pumpkin stuff but i could never get around to making anything because ive been so lazy busy.  howeverrrr, it was my roommates bday last week, so i finally had a reason to make something.  and i will admit upfront that i took the easy convenient route.  i bought a box mix of yellow cake as the base, and literally just added some pumpkin puree and pumpkin spices-and surprisingly it turned out better than expected.  so, if you are in the mood to bake some pumpkin-y things but want to take the easy way out, no one will ever know the difference :)


















recipe follows:

things you need for cupcakes: box mix cake (and the ingredients it calls for), small can of pumpkin puree, spices (cinnamon, ginger, or pumpkin spice mix)

1. i bought the duncan hines yellow cake mix.  and prepared as the directions ordered.  after mixing, i added 1/2 cup to 3/4 cup pumpkin puree.  then put in 5-6 dashes of cinnamon, 1-2 dashes of ginger, and because we had it one hand, i did about 3 dashes of a "pumpkin spice." literally, just shake in whatever fall spices you have.  then bake as directed on box.

****i was an idiot and forgot to add the eggs.  but the cupcakes turned out a little more dense then a normal cupcake and more like pumpkin bread.  for a fluffier, normal cupcake add the eggs...

2. the icing.  things you need: cream cheese (the block of it), powdered sugar, butter, and the rest of the can of the pumpkin puree.

-use an electric mixer or food processor.  put the 8 ounce package of cream cheese and 2 cups of powerdered sugar in bowl/mixer.  mix together.  then continue to add powerdered sugar until you get the consistency you want ( i did about 4 or 5 cups total).  then i added half a stick of butter, about 1/3 cup pumpkin puree, cinnamon, ginger, and about a 1/2 tablespoon of vanilla.  whirl together and thats it!

3. ice the cupcakes after they are cooled.

**i keep them in the fridge because of the cream cheese thats in the icing
